Precautions:
 
⦁ For the real taste of chicken curry, slow cooking is necessary.     This is gives chicken curry a unique taste.

⦁  Don’t use this type of  ingredients in your recipe
⦁  Canned tomato puree
⦁  Cornstarch or Any kind of broth
⦁  Curry Powder


In this recipe we do not use the above mentioned ingredients. 


So this recipe gives us the taste of south indian chicken curry and is very spicy.

Preparation:


⦁    Clean & wash the chicken pieces and keep it to drain.
⦁    Roughly chop the onions, tomatoes and green chillies.
⦁    Peel and crush the ginger and garlic cloves.
Process:
  (Note: Ingredients given below must see)

⦁ Heat oil in a pan or kadai and add the chopped onions.


⦁ Fry on high heat for 10 mins till brown in colour. 




Warning: Don’t cook at high temperature. Must avoid cooking at high temperature. If your chicken is naatu kodi. Make sure to add small pieces of “Betel Nut”


⦁ Add the crushed ginger and garlic and fry on medium heat for 2 mins.



⦁ Add the chopped tomatoes and green chillies and fry on medium heat for 2 mins. 




⦁ Add the turmeric powder and mix & fry on medium heat for around 3 mins till tomatoes are soft. 




⦁ Now add the chicken pieces and fry on high heat for 2-3 mins till the chicken pieces are browned. 



⦁ Add the readymade chicken masala, red Chilli powder and salt, mix and bhunnoo on high heat for 5 mins. 




⦁ Continue to fry on medium heat for another 5 mins.


⦁ Now add 200 ml water and cook on low heat for around 20 mins till the chicken pieces are tender and oil separates

 1. Choose a Chicken

You can make this chicken recipe with bone-in or boneless.

If you are choosing boneless chicken you cannot get the real and spicy juice taste from simple boneless chickness.You have to add thickener.

My best suggestion is you have to use bone-in chicken to get spicy and tasty juice it sweeps into the gravy.

Ingredients for Simple Chicken Curry:


⦁    Chicken- 1 kg
⦁    Onion, rough chopped- 4 medium
⦁    Ginger, crushed- 2 tsp
⦁    Garlic, crushed- 2 tsp
⦁    Tomatoes, roughly chopped
⦁    3 medium - Green chillies, thick chopped- 3 nos.
⦁    Turmeric powder- 1/2 tsp
⦁    Red Chilli Powder- 1.5 tsp
⦁    Readymade Chicken Masala- 1 tbsp (store bought)
⦁    Salt- 1.5 tsp
⦁    Refined Oil- 4-5 tbsp

NOTES

1.You can also skip the whole spices if you do not have. But using them will add a more intense spice to the chicken curry.

2.Adding cold water to chicken may make it hard or stiff. So you have to use hot water instead of cold water.


3.The chicken curry is also cooked in coconut milk instead of water. Do not pour cold coconut milk. Heat up the coconut milk and add it to the chicken curry recipe coconut milk.


4.Please choose a chicken masala or garam masala for the recipe especially.


5.You can also use 3 to 4 tbsps of cream or thick coconut milk towards the end if you prefer. Just add it towards the end and turn off.

1.How do you make chicken curry from scratch?
A.Heat the oil in a large saucepan on a medium heat and cook the finely chopped onions and    garlic for a few minutes.
